These can be prepared the night before and put in the oven the following day.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<!--WPRM Recipe 1086-->\n<div class=\"wprm-fallback-recipe\">\n\t<h2 class=\"wprm-fallback-recipe-name\">Brunch Potatoes<\/h2>\n\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"https:\/\/designkyn.com\/growers-table\/wp-content\/uploads\/2026\/01\/Hash-brown-casserole-150x150.gif\"\/>\t<p class=\"wprm-fallback-recipe-summary\">\n\t\t<p>A delicious side dish for any brunch which can be prepared ahead and baked later<\/p>\t<\/p>\n\t<div class=\"wprm-fallback-recipe-equipment\">\n\t\t<ul><li>13 x 9 inch pan<\/li><\/ul>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-ingredients\">\n\t\t<ul><li>2 16 oz bags of frozen shredded hash browns, thawed<\/li><li>2 cup shredded cheddar cheese<\/li><li>1-1\/2 cup shredded swiss cheese\u00a0(I like to use pepper jack instead)<\/li><li>3 large \u00a0eggs<\/li><li>1\/2 cup (1 stick) melted butter<\/li><li>1 cup milk<\/li><li>1 cup sour cream<\/li><li>1 cup chopped parsley<\/li><li>1 tsp salt<\/li><li>1 tsp pepper<\/li><li>1 tsp thyme (optional)<\/li><li>3\/4 cup french fried onions (optional for a topping)<\/li><li>1\/2 cup \u00a0chopped bacon (optional for a mix in or a topping)<\/li><\/ul>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-instructions\">\n\t\t<ol><li><p>Preheat oven to 350 F. Grease a 13 x 9 inch baking pan.<\/p><\/li><li><p>In a large bowl mix shredded potatoes with half of the cheese<\/p><\/li><li><p>In another large bowl whisk eggs, add milk, sour cream and butter until well mixed. Add parsley, thyme, salt and pepper. Mix thoroughly.<\/p><\/li><li><p>Add potato\/cheese mixture to the wet ingredients. Mix well. Spoon into baking dish.<\/p><\/li><li><p>Sprinkle remaining cheese on top of the potatoes. I like add french fried onions.<\/p><\/li><li><p>Bake for 50-55 minutes.
